This Easy-Peasy Pistachio Ice Cream recipe lives up to its name because it’s beginner-friendly and requires only a few ingredients – four to be exact! You don’t even need any special tools to get the dreamy texture associated with this popular dessert.
Because it doesn’t take much to get this pistachio ice cream prepped and ready, your kids will have fun getting in on the action. Simply gather all the ingredients beforehand and let their inner chef shine!

Another beautiful thing about this recipe is how it can be adjusted to meet dietary restrictions, in case your family has any. Here are awesome alternatives you can try to make this pistachio ice cream recipe work for you:
Dairy-free alternative: Substitute whipping cream and whole milk with non-dairy alternatives such as coconut, almond, or oat milk. This will create a lighter, less creamy texture, but it will still be delicious.

Pistachio Ice Cream Recipe
Makes 1 Loaf Pan | Prep 10 minutes | Freeze 6 hours
Ingredients
- 150 g (1 cup) pistachios, lightly toasted
- 50 g (½ cup) monk fruit sweetener/organic sugar, powdered
- 100 ml (½ cup) milk
- 250 ml (1 cup) whipping cream, whisked
Method
Add pistachios and powdered sugar to a high-speed food mixer and blitz until you have a fine flour-like consistency.
Add milk and continue to mix until well combined and silky smooth. Scrape down the sides of the food mixer and repeat if necessary.
In a separate bowl, use an electric whisk to mix the whipping cream.
Add the pistachio cream to the whipping cream and gently fold in by hand using a spatula until well incorporated.
Transfer to an airtight container and freeze for at least 6 hours.
Before serving, cut the ice cream into large cubes and place cubes into the high-speed food processor.
Blitz for a few seconds to soften and give the mixture an ice-cream consistency.
Serve in your favourite Snackie and enjoy.
