Ingredients
- 2 tbsp olive oil
- 50g butter
- 500 g chicken breasts, diced ($8)
- 1 onion, finely diced ($0.75)
- 2 cloves garlic, finely diced ($0.50)
- 100 g (1 cup) green beans, washed and cut into 1 cm lengths ($2)
- 150 g (2 cups) broccoli, washed and cut into small florets ($2.50)
- 40 g (⅓ cup) frozen peas ($0.25)
- 300 g (1 ½ cups) Arborio rice ($2.50)
- 1L (4 cups) chicken stock
- 80 g (1 cup) Parmesan cheese ($3)
Method
- Preheat the oven to 180°C.
- Heat 1 tbsp oil in a large pan over medium-high heat. Add the chicken and cook for 3 minutes or until golden brown. Remove from pan and set aside.
- Heat the remaining oil and add onion. Sauté for 5 minutes until soft and translucent. Add garlic and remaining vegetables and cook for 5 minutes.
- Add rice and cook, stirring, for 1 minute.
- Transfer to an ovenproof dish. Add browned chicken and stock, then cover and place in the oven. Bake for 25-30 minutes or until rice is tender and liquid is absorbed.
- Stir in butter and ¾ of the Parmesan until melted and combined. Sprinkle remaining Parmesan over the top, then return to the oven to cook for a further 5 minutes or until the cheese has melted.
- Serve in your favourite We Might Be Tiny Picnies Plate.
