Get the kids involved! Let them pick their favourite stamp designs, help cut out shapes, or decorate the cookies after they’re baked. For added Easter fun, make it a challenge to create a cookie for each family member or friend.
Ingredients
- 2⅔ cups all-purpose flour
- 2 tbsp cornflour or rice flour
- ½ tsp salt
- 226 g butter (room temperature)
- ½ cup white sugar
- ½ cup icing sugar
- 1 egg
- 1 tsp vanilla extract or essence
- 1 tsp cinnamon
Method
- Sift and combine the flour, cornflour, cinnamon, and salt in a bowl.
- Using a mixer, cream the butter, sugar, and icing sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until combined. Gradually add the flour mixture. If the dough is crumbly, mix in 1–2 tablespoons of water.
- Divide the dough into two flat discs, wrap in plastic wrap, and refrigerate for at least 1.5 hours (or until firm enough to roll).
- Preheat your oven to 180°C.
- Working with one disc at a time, roll the dough on a lightly floured surface to about 6mm thickness.
- Flour your Easter Stampies lightly and press them firmly into the dough to create fun designs. Cut out the cookies using a stainless steel cutter.
- Place the cookies on a baking tray lined with baking paper or a silicone mat. Chill in the fridge for 10 minutes to keep the dough firm.
- Bake on the centre rack for 8–10 minutes. Do not overbake – they should stay pale and soft.
- Cool for 10 minutes, then transfer to a wire rack to cool completely before decorating or storing.
Tip: return the dough to the refrigerator if it goes soft while rolling out. This will ensure that the dough doesn't spread (and lose the stamp imprints) during the baking process.
