Serve up a morning tea treat filled with love this Mother’s Day.
Simple to make, minimal ingredients, and little hands will love the mixing, rolling, decorating, and probably a bit of quality controlling along the way, before serving this up to the Mumma Bears and special ladies in their lives. Ingredients
100 g (1 cup) light spelt flour
50 g (1/4 cup) butter, cut into small chunks
25 g (2 tbsp) coconut sugar
3 tbsp milk of choice (we used rice milk)
250 g (2-3 cups) mixed berries, frozen or fresh
Method
Preheat oven to 180 C.
Sieve flour into a bowl.
Rub the butter into the flour until a fine breadcrumb consistency.
Add the sugar and mix until combined.
Gradually mix in the milk. Shape into a ball, wrap in baking paper, and allow to rest in refrigerator for 30 minutes.
Meanwhile, draw and cut out a heart shape on paper. This will be the template for the galette.
Remove pastry dough from refrigerator and roll out on a large piece of baking paper until about half a centimetre thick.
Place paper heart on top and using a sharp knife, cut about one centimetre around the shape.
Remove paper heart and place berries of choice on top of the pastry leaving a border of at least one centimetre. Fold the border over, pleating and pressing a neat edge.
Lift the baking paper to transfer galette onto a baking tray and place in oven. Bake for 20 minutes or until edges are golden.
Allow to cool slightly before serving with fresh cream.
