Makes 15 Muffins | Prep 30 minutes
Ingredients
165 g (1 ½ cups) light spelt flour
65 g (¾ cup) rolled oats
1 tbsp baking powder
¼ tsp cinnamon
125 ml (½ cup) maple syrup
185 ml (¾ cup) milk
80 ml (⅓ cup) extra virgin olive oil
2 eggs, whisked
2 tsp vanilla extract
125 g (1 cup) blueberries, fresh or frozen
Method
