Today’s cookie recipe for kids (and grown-ups) comes with a triple whammy because it’s healthy, fun and delivers the texture of raw cookie dough that can be so impossible to resist.
In only 20 minutes (and some time in the fridge), you’re looking at the goodness of oats, cashews, peanuts all bundles up in 6 snack-friendly cookies ready to please the hungry kids in your life.
These cookies store well in the fridge, which means you can half the effort by doubling the quantities so you’re sorted for tomorrow’s after-school treat as well.

Makes 6 cookies | Prep 20 minutes
Ingredients
- 50 g (½ cup) oats
- 200 g (2 cups) cashews
- ¼ tsp salt
- 125 ml (½ cup) peanut butter
- 60 ml (¼ cup) maple syrup
- 1 tsp vanilla extract
- 2 tbsp milk of choice
Method
Place oats and cashews in a high-speed food processor and process until powdered.
Transfer to a mixing bowl, add salt and mix. Add all remaining ingredients and stir until a smooth dough forms. Use your hands to bring the dough together into a ball.
Place the dough ball in between two pieces of parchment paper and roll out until about 5 mm thick. Transfer the dough, still on the parchment paper, to the fridge, ensuring it is lying completely flat, and refrigerate for at least one hour.
Remove from the fridge then use the cookie cutter to cut out the cookies and the Stampies to print your favourite Aussie animals onto each one. The offcuts can be cut into little bite-sized squares to be enjoyed along with the cookies.
Enjoy immediately or return to the fridge to store until ready to serve.
