So today we’re sharing our easy take on rice paper rolls with you so you can make it a snacktime staple in your family.
They’re super easy to make and give you endless opportunities to create new flavour combinations that please everyone in your household. Yes, even the tiniest of humans!
In this version we’re sharing our favourite chicken & veggie version that’s become a favourite at We Might Be Tiny HQ over recent months. It combines the freshness of leafy greens, chicken breast, avocado and a bunch of grated veggies.
But you can also go all veggie if that’s what you prefer.

Makes 24 I Prep 40 minutes
Ingredients
- 1 packet rice paper wrappers
- 30 g (1 cup) leafy greens (baby spinach, rocket, kale, collard greens, lettuce)
- 1 carrot, grated
- 1 beetroot, grated
- 1 cucumber, cut into sticks
- 1 handful fresh herbs (coriander, parsley, basil, mint)
- 1(½) avocado, sliced
- 1chicken breast, cooked, and cut into cubes
Method
Dip each rice paper roll in a bowl of hot water for a few minutes to soften.
Spread each sheet flat on a clean workbench/plate.
Assemble with ingredients and roll as per step.
Step 1
Place filling at the edge of the circle/square.
Step 2
Flip both sides inward.
Step 3
Roll from bottom to encase filling.
Step 4
Enjoy your rice paper.
