  • 2 tbsp olive oil

  • salt and pepper

Method

  1. Preheat oven to 180° C and line a baking tray with parchment paper.
  2. Wash and dry the potatoes. Using a sharp knife, cut parallel slits into each potato, stopping just before you cut through so that the slices stay connected at the bottom. Space the slices 5 mm apart.
  3. Arrange potatoes on the baking tray, then drizzle with olive oil, ensuring that oil gets into the slits.
  4. Season with herbs, salt, and pepper, then bake for 40-50 minutes or until potatoes are crispy on the edges.
  5. Best served straight from the oven while the edges are at their crispiest.
