Ingredients
- 50 g (1/4 cup) red lentils
- 750 ml (2 1/2 cups) vegetable stock
- 2 medium sized carrots, peeled and cut into chunks
- three quarters medium sized pumpkin
- 1 large potato, peeled and cut into chunks
Method
Add all ingredients to a large saucepan, bring to the boil and allow to simmer (lid on) for 20 minutes.
Using a blender, blitz until smooth.
Serve in your favourite Snackie and enjoy.
