Rainbow Gummies - The ultimate homemade gelatin gummies recipe
Gelatin gummies have emerged as a recent trend. One that seems here to stay.
We’ve been embracing this fun way to boost our immunity, gut health and nutrient intake for a while.
But especially since the launch of our Mini Poddies, which conveniently turn homemade gelatin gummies into character-filled gems.
We’ve been loving them. And our little ones have been loving them even more!
Whether you love your gummies bear, cat or bunny-shaped, this recipe perfectly blends the tastiest fruit and veg into bite-sized chunks.
Store them in the fridge in an airtight container for up to a week if you can convince the rest of the family to stick to 1 a day.
What do you need to whip them up?
Gelatin, maple syrup and vanilla extract + nutrient-boosting fruit and veg.
Then grab your high-speed food processor and task it with whipping up 3 colourful layers that turn these homemade gelatin gummies into a rainbow feast for the senses and tastebuds.
Just like all other We Might Be Tiny silicone products, the Mini Poddie is freezer, oven and dishwasher-safe. So you can task your dishwasher with the cleanup once your creations have set in the fridge.
Whoever said dishing up toddler-pleasing, nutrient-dense snacks had to be difficult?
Not sure, but they clearly haven’t heard of our Mini Poddies.
Makes 2 Mini Poddies trays | Prep 20 minutes | Refrigerate 2 hours
Ingredients
GREEN
- 250 ml (1 cup) celery and apple juice equates to juice of 5 sticks celery and 1 1/2 green apples
- 3 tbsp gelatin
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
ORANGE
- 250 ml (1 cup) carrot and orange juice equates to juice of 2 large carrots and 1 naval orange
- 3 tbsp gelatin
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
RED
- 100 g (1 cup) raspberries, frozen
- 125 ml (1/2 cup) filtered water
- 3 tbsp gelatin
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
Method
To make the red gummies, add the frozen raspberries and water to a high-speed food processor and blitz until smooth.
Sieve the liquid to remove most of the seeds leaving you with a red juice.
To make all three colours, pour juice into a small pan and gradually add the gelatin, allowing it to be absorbed into the juice. Let sit for a few minutes and allow the mixture to thicken.
Over a low heat gently stir for about five minutes until it is hot and has become runny. Be careful not to boil the mixture as this will give it a very rubbery texture.
Add the maple syrup and vanilla extract and stir to combine.
Pour the mixture into the Mini Poddies. Allow the mixture five minutes resting time before placing in the refrigerator. This helps to improve both the shine of the gummies and their taste.
Refrigerate for at least 2 hours, then pop them out of the tray and store in an airtight container in the refrigerator for up to 1 week.
