The Healthy Lemon Shortbread Recipe for Kids
Baked treats don’t have to come with tons of sugar.
And we’re on a mission to bring more alternatives to households globally that come without refined sugar and the usual additives you can expect from store-bought staples.
One of our irresistible favourites is this Healthy Lemon Shortbread Recipe, specifically designed for your snack-hungry kids.
It only demands a short list of healthy ingredients, takes only 30 minutes total to whip up and delivers 20 super cute cookies to share among all your favourite people.
Best of all?
It’s perfect to involve your kids.
Turn your stock-standard shortbread cookies into paw-some animal creations with the We Might Be Tiny Australiana Stampies set.
Each set comes with a stainless steel cookie cutter to make the apprentice production line super efficient and 1 wooden stamper to help you easily switch between your favourite Aussie silicone animal stamps.
The hardest part is the wait. Because there are 20 seemingly long minutes that stand between you and your new favourite shortbread cookies. We love to dish our goodies up on We Might Be Tiny Snackies so our signature bear, bunny and cat characters can join in the fun as well.
And once the kitchen adventure is over, simply pop your Snackie into the dishwasher so you have more time to dream up your next baking session.
Makes 20 cookies | Prep 30 minutes
Ingredients
- 300 g (2 ½ cups) light spelt flour
- 50 g (¼ cup) rice flour
- 150 g butter
- 60 m (¼ cup) maple syrup
- 1 egg, whisked
- zest of a lemon
Method
Preheat oven to 160 C and line a tray with baking paper.
Sieve both types of flour into a bowl and combine.
Rub the butter into the flour until it resembles fine crumbs.
Add maple syrup, egg, and lemon zest, and mix well until a firm dough forms.
Roll out on baking paper until about 3 mm thick. Place another sheet of parchment paper on top to cover then transfer dough to the fridge, ensuring it is on a completely flat surface, to chill for 15 minutes.
Once chilled, use the cookie cutter to cut out the cookies then use Stampies to print your favourite animals onto each one.
Place onto tray and bake for 15 to 20 minutes until golden.
Remove from oven and allow to cool.
