Makes 1 Mini Poddies tray | Prep 20 minutes | Freeze overnight
Ingredients
- 40 g (1/3 cup) cashews, roasted
- 2-3 cloves garlic, roasted
- 250 g (1 cup) semi-dried tomatoes
- 25 g (1 cup) basil leaves, tightly packed
- 10 g balsamic vinegar
- 80 ml (1/3 cup) to 125 ml (1/2 cup) olive oil salt and pepper to taste
Method
Place all ingredients except olive oil into a high-speed food processor and process until all ingredients are finely chopped into a coarse paste.
Gradually add the olive oil and mix to combine until you have the desired consistency.
Spoon mixture evenly into Mini Poddies and freeze overnight. Remove from tray and store in an airtight container in freezer for up to 3 months.
