Makes 8 Snackies (plus leftovers)
Ingredients
- 2-3 tbsp olive oil
- 1 cinnamon stick
- 3 whole cloves
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 bay leaf
- 5-6 curry leaves, optional
- 2 tsp turmeric
- 1 tsp coriander powder
- 1 brown onion, diced
- 3 cloves garlic, diced
- 1 carrot, peeled and grated
- 1 zucchini, grated
- 1red capsicum, finely diced
- 3 medium tomatoes, blitzed to a puree
- 2 cm piece of ginger
- 265 g (1 cup) red lentils
- 400 ml (1 tin) coconut milk
- 500 ml (2 cups) water
- 2 tbsp lemon juice
- salt and pepper to taste
Method
In a large saucepan, add olive oil, cinnamon stick, cloves, and bay leaf and heat gently for 2-3 minutes.
Add mustard seeds and heat until you hear them start to pop - be careful not to burn.
Add cumin seeds, curry leaves, and turmeric and stir for 2 minutes.
Add onions and saute for 3-5 minutes until soft and translucent. Add garlic, ginger, and vegetables and saute for a further 3 minutes.
Add lentils, water, and coconut milk and allow to simmer for 20-25 minutes or until lentils are cooked.
Add pureed tomatoes and coriander powder and cook for a further 10 minutes. Just before serving add lemon juice and stir to combine.
Serve in a Snackie with rice and garnish with fresh coriander.
