Ingredients:
- 2 ripe bananas
- 2 eggs
- 1.5 cup rolled oats
- 1 large handful of fresh spinach leaves
- 1/2 cup unsweetened oat milk (or any non-dairy milk of your choice)
- 1 tsp baking powder
- 1 tsp cinnamon

Blend: In a blender or food processor, combine all ingredients.

Heat: Heat a non-stick skillet over medium heat and lightly grease with olive or coconut oil.

Pour: Pour into a squeeze bottle for smaller portioned pancakes (great for tiny hands) Cook for 2-3 minutes, or until bubbles start to form on the surface.

Flip: Carefully flip the pancakes and cook for an additional 1-2 minutes on the other side, or until golden brown and cooked through.
