To make these tasty mini falafel burgers, you will need the following ingredients:
- 1 tbsp coconut oil for frying
- 30 g (¼ cup) sunflower seeds, toasted and finely chopped
- Half a small brown onion, finely chopped
- 2 cloves garlic, finely chopped
- 2 cans chickpeas, retaining 80 ml (⅓ cup) of the liquid
- 45 g (⅓ cup) chickpea flour
- 2 tsp cumin seeds
- 1 tsp smoked paprika
- 1 tsp ground coriander
- Salt and pepper
Method
Start by lining a baking tray with parchment paper and set it aside.
Next, add all the ingredients to a large mixing bowl. Using your hands or a masher, mash the mixture into a paste. Alternatively, you can blitz the mixture for a few seconds in a high-speed food processor.
Using wet hands, shape a tablespoonful of the mixture into a patty and place it on the prepared baking tray. Repeat this process with the remaining mixture.
Heat the coconut oil in a large, nonstick frying pan over medium-high heat. Gently place the burgers in the pan and press them lightly with a spatula. Cook the burgers on each side for 5 to 10 minutes, or until they are brown and crispy on the outside.
